Ingredients
Summer Zucchini
Summer Squah
Carrots (blanched and cooled)
Garlic (to taste)
Olive Oil
Button Mushroooms
Fresh Basil
Fresh Oregano
Salt
Directions
Slice zucchini, summer squash and carrots lengthwise in 1/2 inch strips
Toss vegetables and mushrooms in garlic and olive oil
Lightly salt
Pre-heat grill to medium-high
Lightly brush grates with vegetable oil
Chop Fresh Basil & Oregano
Grill vegetables on both sides until “al Dente”
Place vegetables on cutting board and cut to bite-size on the bias
Toss with fresh herbs and serve
Can be served cold with a balsamic reduction.
